I would have to say...the Kara No Kyoukai series of OST's, as well as Ar Tonelico's OST's along with the Hymmnos disc's.

Tales of Legendia- Beautiful orchestra music, especially from the woodwinds.
Valkyria Chronicles- The game made the music memorable
Gundam 00- There were a couple tracks, 'specially O Riser's theme, that I really loved.
Kingdom Hearts (I have the entire OST from 1, CoM, 2, and the Final Mixes)- A mixed bag of typical high quality orchestrated music from SE, and Disney themes.
Soul Eater- Colorful OST with tension filled and comical songs
Code Geass- Another highly varied OST

Aria the Animation OST for relaxing, and FLCL OST for shenanigans.
Also, Haibane Renmei Haneone OST and Yokohama Kaidashi Kikou ~Quiet Country Cafe~ are very nice.

The only OST i listen totally is Kara No Kyoukai ones, in others i just pick up some tracks. most of them contains atmospheric songs >.< it's kinda annoying
